These Pumpkin Oatmeal Bars are soft, chewy, and filled with cozy fall flavors like cinnamon, nutmeg, and pumpkin. Ingredients

  • 1 ½ cups old-fashioned oats
  • 1 cup all-purpose flour
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • ¾ cup pumpkin puree
  • ½ cup brown sugar
  • ¼ cup honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips or raisins (optional)

Instructions

  • Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
  • In a large bowl, combine oats, flour, baking soda, cinnamon, nutmeg, and salt.
  • In another bowl, whisk pumpkin puree, brown sugar, honey, egg, and vanilla until smooth.
  • Add the wet ingredients to the dry mixture and stir until just combined. Fold in chocolate chips or raisins if desired.
  • Spread the mixture evenly into the prepared baking dish.
  • Bake for 20-25 minutes or until the edges are golden. Allow to cool completely before slicing.

Notes

  • Substitute honey with maple syrup for a different natural sweetness.
  • To make it vegan, replace the egg with a flax egg (1 tablespoon ground flaxseed + 3 tablespoons water).
  • Use whole wheat flour in place of all-purpose for a heartier texture.
  • Bars firm up as they cool, so wait until completely cool before slicing for the best texture.
