- ¼ cup honey
- 1 large egg
- 1 teaspoon vanilla extract

Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
- In a large bowl, combine oats, flour, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk pumpkin puree, brown sugar, honey, egg, and vanilla until smooth.
- Add the wet ingredients to the dry mixture and stir until just combined. Fold in chocolate chips or raisins if desired.
- Spread the mixture evenly into the prepared baking dish.
- Bake for 20-25 minutes or until the edges are golden. Allow to cool completely before slicing.
Notes
- Substitute honey with maple syrup for a different natural sweetness.
- To make it vegan, replace the egg with a flax egg (1 tablespoon ground flaxseed + 3 tablespoons water).
