Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon pumpkin spice
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup pumpkin puree
  • 2 ripe bananas, mashed

Instructions

  • Preheat the oven to 350°F (175°C) and grease a loaf pan.
  • In a medium bowl, whisk together the flour, baking soda, salt, and pumpkin spice.
  • In a large bowl, cream together the softened butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition.
  • Mix in the vanilla extract, pumpkin puree, and mashed bananas until fully combined.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely before slicing.

Notes

  • For added texture, stir in 1/2 cup of chopped nuts or chocolate chips into the batter.
  • Store at room temperature for up to 3 days, in the refrigerator for up to a week, or freeze for up to 3 months.
  • For a gluten-free option, use a gluten-free flour blend in place of all-purpose flour.
