Ingredients

  • ¾ cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon pumpkin pie spice

Instructions

 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until combined.
  4. In a separate bowl, whisk flour, baking soda, and pumpkin pie spice.
  5. Gradually add dry ingredients to wet ingredients, mixing until combined.
  6. Roll dough into balls and place on baking sheet with space between.
  7. Bake for 10-12 minutes until edges are golden brown.
  8. Cool on the sheet for a few minutes, then transfer to a wire rack to cool completely.
