Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together butter, pumpkin puree, and sugar. Add egg and vanilla, mixing until smooth.
- In another bowl, whisk flour, baking soda, cinnamon, and nutmeg. Gradually mix dry ingredients into the wet mixture until combined.
- Drop spoonfuls of dough onto prepared baking sheet, spacing 2 inches apart.
- Bake for 10-12 minutes or until edges are golden. Cool on a wire rack.
- For the frosting, beat softened cream cheese and butter until smooth. Add powdered sugar and vanilla; mix until creamy.
- Once cookies are completely cool, frost generously and garnish with a sprinkle of cinnamon if desired.
