Description
A quick and irresistible loaf made with creamy ricotta, zesty limoncello, and a light popover-style texture—perfect for brunch or dessert.
Ingredients
Scale
- 1 cup ricotta cheese
- 1/2 cup limoncello
- 3 large eggs
- 1 cup all-purpose flour
- 1/2 teaspoon salt
Instructions
- Preheat oven to 375°F (190°C) and grease a loaf pan.
- In a bowl, whisk together ricotta, limoncello, and eggs until smooth.
- Gently fold in the flour and salt. Don’t overmix — a few lumps are fine.
- Pour batter into prepared loaf pan and smooth the top.
- Bake 30–35 minutes until golden brown and a toothpick comes out clean.
- Cool slightly before slicing. Dust with powdered sugar or top with whipped cream.
Notes
Use high-quality ricotta for the best texture. Substitute limoncello with lemon juice and a touch of sugar if needed. Best served warm with a sweet topping.
