Description

A quick and irresistible loaf made with creamy ricotta, zesty limoncello, and a light popover-style texture—perfect for brunch or dessert.

Ingredients

Scale
  • 1 cup ricotta cheese
  • 1/2 cup limoncello
  • 3 large eggs
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 375°F (190°C) and grease a loaf pan.
  2. In a bowl, whisk together ricotta, limoncello, and eggs until smooth.
  3. Gently fold in the flour and salt. Don’t overmix — a few lumps are fine.
  4. Pour batter into prepared loaf pan and smooth the top.
  5. Bake 30–35 minutes until golden brown and a toothpick comes out clean.
  6. Cool slightly before slicing. Dust with powdered sugar or top with whipped cream.

Notes

Use high-quality ricotta for the best texture. Substitute limoncello with lemon juice and a touch of sugar if needed. Best served warm with a sweet topping.
