Instructions

  1. Prepare the Crust: Preheat the oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then let it cool completely.
  2. Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese and sugar until smooth. Add vanilla extract, lime zest, and lime juice, mixing until combined. Whip the heavy cream in a separate bowl until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture. Pour the filling over the cooled crust, smoothing the top. Refrigerate for at least 4 hours or overnight.
  3. Prepare the Lime Mousse Topping: Whip the heavy cream and powdered sugar until soft peaks form. Add lime zest and juice, then continue whipping until stiff peaks form. Spread or pipe the mousse on top of the chilled cheesecake.
