Instructions

  • Prepare the Rice Krispie Base

Press the mixture firmly into the bottom of a greased 9-inch springform pan to create the base. Let it cool and set aside.

    In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined. If using, stir in the lemon juice for a slight tang.
  • Assemble and Chill
    Pour the cheesecake filling over the Rice Krispie base and spread evenly. Cover and refrigerate for at least 4 hours, or until fully set.
