These Rice Krispie Chocolate Chip Cookies bring a fun, crispy twist to the classic chocolate chip cookie! With the familiar chew of a buttery cookie and an unexpected crunch from Rice Krispies, these cookies are simply irresistible. Perfect for family treats, holiday spreads, or a special snack, they combine soft and crispy textures for a cookie experience you’ll love!

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 2 cups Rice Krispies cereal

Instructions

  • Preheat the Oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Cream the Butter and Sugars: In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add Eggs and Vanilla: Beat in the eggs one at a time, followed by vanilla extract, mixing until well combined.
  • Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, and salt.
  • Mix Dry Ingredients into Wet Ingredients: Gradually add dry ingredients to the wet mixture, stirring until just combined.
  • Fold in Chocolate Chips and Rice Krispies: Gently fold in chocolate chips and Rice Krispies cereal until evenly distributed throughout the dough.
  • Scoop the Dough: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the baking sheet, spacing about 2 inches apart.
  • Bake the Cookies: Bake for 10-12 minutes, or until edges are golden. The centers may look slightly underbaked; they will firm up as they cool.
  • Cool and Serve: Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For extra crunch, try adding an additional half cup of Rice Krispies.
  • If you want to experiment, substitute Rice Krispies with Corn Flakes or Cocoa Krispies.
  • Store in an airtight container with a slice of bread to keep cookies soft, or freeze for up to three months.
