Ingredients
Scale
- 3 large sweet potatoes, peeled and sliced into 1/4-inch rounds
- 6 oz feta cheese, crumbled
- 1/4 cup walnuts, toasted and chopped
- 1/4 cup balsamic vinegar
- 1 tbsp honey
- 2 tbsp olive oil
- Fresh thyme for garnish
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Arrange the sweet potato slices on a baking sheet and drizzle with 2 tbsp of olive oil. Season with salt and pepper.
- Roast for 25-30 minutes, flipping halfway through, until the sweet potatoes are tender and slightly caramelized.
- In a small saucepan, combine the balsamic vinegar and honey. Simmer over medium heat for 10-15 minutes until the mixture reduces by half and thickens into a glaze. Set aside.
- Layer the roasted sweet potato slices and crumbled feta on a serving plate, alternating them to create a stack.
- Drizzle the olive oil and balsamic honey glaze over the stack, then sprinkle with toasted walnuts.
- Garnish with fresh thyme and serve immediately.
Notes
- To save time, the sweet potatoes and balsamic glaze can be prepared ahead of time and reheated before serving.
- Feel free to swap walnuts with pecans or goat cheese for feta to suit your taste.
- Toast the walnuts in the oven at 350°F (175°C) for 5-7 minutes to bring out their rich flavor.
