Ingredients

  • 3 large sweet potatoes, peeled and sliced into 1/4-inch rounds
  • 6 oz feta cheese, crumbled
  • 1/4 cup walnuts, toasted and chopped
  • 1/4 cup balsamic vinegar
  • 1 tbsp honey
  • 2 tbsp olive oil
  • Fresh thyme for garnish
  • Salt and pepper to taste


Instructions

  • Preheat your oven to 400°F (200°C).
  • Arrange the sweet potato slices on a baking sheet and drizzle with 2 tbsp of olive oil. Season with salt and pepper.
  • Roast for 25-30 minutes, flipping halfway through, until the sweet potatoes are tender and slightly caramelized.
  • In a small saucepan, combine the balsamic vinegar and honey. Simmer over medium heat for 10-15 minutes until the mixture reduces by half and thickens into a glaze. Set aside.
  • Layer the roasted sweet potato slices and crumbled feta on a serving plate, alternating them to create a stack.
  • Drizzle the olive oil and balsamic honey glaze over the stack, then sprinkle with toasted walnuts.
  • Garnish with fresh thyme and serve immediately.
