Ingredients

Scale
  • 1 pre-made flatbread or pizza crust
  • 1/2 cup cranberry sauce (homemade or store-bought)
  • 1/4 cup balsamic glaze
  • 1/2 cup shredded mozzarella or fontina cheese
  • 1/4 cup crumbled goat cheese (optional for added creaminess)
  • 1/4 small red onion, thinly sliced
  • Fresh rosemary and thyme, chopped (for garnish)
  • Salt and pepper, to taste
  • Olive oil spray

Instructions

  • Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Prepare Flatbread: Place the flatbread on the baking sheet and lightly spray with olive oil. Spread the cranberry sauce evenly over the flatbread, leaving a small border around the edges.
  • Add Toppings: Drizzle balsamic glaze over the cranberry layer. Sprinkle shredded mozzarella or fontina cheese on top. Add crumbled goat cheese if desired, followed by thinly sliced red onions. Season with a pinch of salt and pepper.
  • Bake: Bake for 10-12 minutes, or until the cheese is melted and bubbly, and the edges of the flatbread are golden brown.
  • Garnish & Serve: Remove from the oven, garnish with fresh chopped rosemary and thyme, and add an extra drizzle of balsamic glaze if you like. Slice into pieces and serve warm.

Notes

  • Make it Vegan: Use your favorite dairy-free cheese and ensure the flatbread is vegan-friendly.
  • Add Crunch: Top with toasted walnuts or pecans for an extra layer of texture.
  • Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F (175°C) for a few minutes to regain crispiness.
