Description

These Salted Caramel Stuffed Chocolate Cookies are the ultimate gooey indulgence! Rich dark chocolate cookies with a gooey caramel center, topped with a sprinkle of sea salt for the perfect balance of sweet and salty. Ready in just 18 minutes, these cookies are quick, decadent, and sure to impress!

Ingredients

Scale
  • 3/4 cup salted butter, room temperature
  • 1/2 cup brown sugar, lightly packed
  • 1/2 cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 cup cocoa powder (preferably Hershey’s Special Dark)
  • 1 tsp baking soda
  • Fun-size Simply Caramel Milky Way bars, cut in half
  • Sea salt for sprinkling

Instructions

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  • In a large bowl, cream the butter and sugars together until light and fluffy, about 3-4 minutes.
  • Add in the egg and vanilla extract, mixing until well combined.
  • Stir in the flour, cocoa powder, and baking soda until a thick dough forms.
  • Roll about 2 tablespoons of dough into a ball. Break the ball in half and press a piece of the Milky Way caramel bar into the center, then press the halves back together, sealing the edges.
  • Place dough balls onto the baking sheet, leaving space between each one. Sprinkle with sea salt.
  • Bake for 8-10 minutes, until the edges are set and the center looks slightly undercooked.
  • Let cookies cool on the sheet for 2-3 minutes before transferring to a cooling rack.

Notes

  • For a richer flavor, add chocolate chips to the dough.
  • If you don’t have Milky Way bars, you can use Rolos or soft caramels.
  • These cookies freeze well—freeze the dough balls and bake directly from frozen, adding 1-2 extra minutes to the bake time.
  • Be sure to seal the dough around the caramel to prevent leaks!
