  • 1 pound Italian sausage (mild or spicy, or breakfast sausage)
  • 1 yellow onion, diced
  • 1 ½ teaspoons garlic powder
  • 1 quart chicken stock (or chicken broth)
  • 14 ounces crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon sea salt
  • 24 cups baby spinach
  • 1 cup heavy cream (or heavy whipping cream)
  • 10 ounces fresh tortellini (or thawed frozen tortellini)
  • Freshly grated parmesan (optional, for topping)
  • Red pepper flakes (optional, for topping)
  • Salt & pepper to taste

Instructions

  • In a large Dutch oven or stock pot, heat to medium-high. Add the ground sausage, diced onions, and garlic powder. Stir frequently and cook until the sausage is fully browned (about 5 minutes). Drain excess grease if needed.
  • Pour in the chicken stock, crushed tomatoes, and tomato paste. Stir until well combined, then bring to a gentle boil. Reduce heat, cover, and simmer for 15 minutes, stirring occasionally.
  • Add the tortellini, heavy cream, baby spinach, and salt. Continue cooking for 3-5 minutes, or until the tortellini is tender and spinach is wilted.
  • Serve hot, garnished with freshly grated parmesan, red pepper flakes, salt, and pepper to taste.

Notes

For best results, adjust the sausage type (mild or spicy) to your taste preference. For an added veggie boost, try adding diced carrots or celery with the onions. Store leftovers in the refrigerator for up to 3 days, or freeze for up to 2 months. Reheat gently on the stove, adding a splash of cream for extra richness.
