Soft cookies stuffed with gooey neon-green frosting bring a little magic to your Halloween celebrations. Perfect for kids and adults alike, they’re fun to make, delicious to eat, and guaranteed to be the star of your Halloween dessert table!

Ingredients

Scale
  • 1 cup sweet cream unsalted butter (softened)
  • ¾ cup sugar
  • ⅔ cup packed brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2¼ cups all-purpose flour
  • ⅔ cup unsweetened cocoa powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • M&M candies (orange, green, and purple)
  • 16 oz white frosting (about one container)
  • 5 drops neon green gel food coloring

Instructions

  • Preheat oven to 350°F (175°C) and line a cookie sheet with parchment paper.
  • Separate M&Ms by color and set aside.
  • In a medium bowl, sift together the flour, baking soda, salt, and cocoa powder.
  • In a large mixing bowl, use an electric mixer to cream the butter, sugar, and brown sugar until light and fluffy.
  • Add in eggs and vanilla extract, mixing until fully combined.
  • Gradually add the dry ingredients to the wet mixture, mixing on low until a soft dough forms.
  • Stir in about half of the M&Ms.
  • Roll the dough into 2-inch balls and place them on the prepared cookie sheet. Press some of the remaining M&Ms into the tops of the dough balls.
  • Bake for 9-11 minutes or until the edges are set and the centers are soft. Cool cookies on the sheet for a few minutes before transferring to a wire rack.
  • To prepare the frosting, microwave the white frosting for 15 seconds to soften. Stir in the green food coloring until the frosting is neon green.
  • Use a flavor injector to fill each cookie with the green frosting by inserting the injector into the side of the cookie and gently filling it until the top cracks slightly.

Notes

  • Chill the dough if it becomes too soft to handle. Refrigerate for about 30 minutes before shaping into balls.
  • Don’t overfill the cookies with frosting to avoid excessive cracking.
  • Experiment with different frosting colors for more spooky fun!
