- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 3 ripe bananas, mashed
- 1/4 cup granulated sugar (for topping)
- 1 teaspoon ground cinnamon (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
- In a large bowl, cream the butter and sugar together until light and fluffy.
- Beat in the eggs one at a time, then mix in the vanilla extract and sour cream.
- Stir in the mashed bananas until well combined.
- Gently fold in the dry ingredients, mixing just until combined.
- Pour the batter into the prepared loaf pan.
- In a small bowl, mix together the topping sugar and cinnamon, then sprinkle over the batter.
- Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
Notes
- For extra flavor, you can add a handful of chopped nuts or chocolate chips to the batter.
- If your bananas aren’t ripe enough, you can ripen them quickly by placing them in a warm oven (300°F) for 15-20 minutes.
