A delightful twist on classic banana bread, this Snickerdoodle Banana Bread combines the comforting sweetness of ripe bananas with the warm, cinnamon-sugar goodness of snickerdoodles. Perfect for breakfast, snacks, or dessert, this moist and flavorful loaf is easy to make and impossible to resist!


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 3 ripe bananas, mashed
  • 1/4 cup granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
  • In a large bowl, cream the butter and sugar together until light and fluffy.
  • Beat in the eggs one at a time, then mix in the vanilla extract and sour cream.
  • Stir in the mashed bananas until well combined.
  • Gently fold in the dry ingredients, mixing just until combined.
  • Pour the batter into the prepared loaf pan.
  • In a small bowl, mix together the topping sugar and cinnamon, then sprinkle over the batter.
  • Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!

Notes

  • For extra flavor, you can add a handful of chopped nuts or chocolate chips to the batter.
  • If your bananas aren’t ripe enough, you can ripen them quickly by placing them in a warm oven (300°F) for 15-20 minutes.
  • This bread freezes well. Wrap it tightly in plastic wrap and store in a freezer bag for up to 3 months.
