These Sourdough Cheesy Breadsticks are crispy on the outside, soft and cheesy on the inside, and packed with garlicky, herby flavor. Made with sourdough discard, they’re an easy and delicious way to use up leftover starter while creating a crowd-pleasing snack or side dish. Serve them warm with marinara, ranch, or your favorite dip!

- 1 1/2 cups all-purpose flour
- 1/2 cup warm water
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp sugar
- 1 tsp baking powder
- 1 cup shredded cheese (cheddar, mozzarella, or a blend)
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- 1/4 cup melted butter (for brushing)
- Optional: Grated Parmesan cheese and chopped parsley for garnish

Prepare the Dough
- In a large mixing bowl, combine sourdough discard, flour, warm water, olive oil, salt, sugar, and baking powder. Mix until a dough forms.
- Knead on a floured surface for 5-7 minutes until smooth and elastic.
- Place in a greased bowl, cover, and let rest for 1 hour.

Shape the Breadsticks
- Preheat oven to 400°F (200°C).
- Roll out the dough into a 1/4-inch thick rectangle.
- Sprinkle cheese, garlic powder, and oregano evenly over the dough.
- Fold the dough in half lengthwise and press gently to seal the cheese inside.
- Cut into 1-inch-wide strips.

- Twist each strip and place on a parchment-lined baking sheet.
- Brush with melted butter and sprinkle extra cheese if desired.
- Bake for 15-18 minutes, or until golden brown.

- Remove from the oven and brush with more melted butter.
- Sprinkle with grated Parmesan and chopped parsley.
