Strawberry Layer:
- 1 1/2 cups fresh strawberries, hulled and sliced

- 1 teaspoon lemon juice

- 1 cup semi-sweet chocolate chips
- 1 1/2 cups heavy whipping cream, divided
- 1 teaspoon vanilla extract
- 2 tablespoons powdered sugar
Garnish (optional):
- Fresh strawberries
- Chocolate shavings or cocoa powder
Instructions
- Prepare the Strawberry Layer: In a blender or food processor, blend the strawberries, sugar, and lemon juice until smooth. Divide the mixture evenly into serving glasses, filling about one-third of each glass. Chill in the fridge.
- Make the Chocolate Mousse: Melt chocolate chips in a heatproof bowl over a double boiler or in the microwave in 30-second intervals. Let cool slightly. In a separate bowl, whip 1 cup of heavy cream with powdered sugar and vanilla extract until soft peaks form. Gently fold the melted chocolate into the whipped cream until smooth.
- Assemble the Mousse: Spoon the chocolate mousse on top of the chilled strawberry puree in each glass. Whip the remaining 1/2 cup of heavy cream and top each serving with a dollop of cream.
- Chill and Serve: Refrigerate for at least 1-2 hours to allow the mousse to set. Before serving, garnish with fresh strawberries and chocolate shavings, or dust with cocoa powder.
