This Sweet Hawaiian Crockpot Chicken is the perfect blend of savory and sweet with tender chicken thighs cooked in a tropical sauce of pineapple juice, soy sauce, honey, and brown sugar. Slow-cooked to perfection with bell peppers and onions, this dish is an easy, hands-off meal that’s perfect for busy weeknights or meal prep! Serve it over rice and garnish with fresh green onions for a dinner that’s bursting with flavor.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken thighs
  • 1 cup pineapple juice
  • ½ cup soy sauce
  • ¼ cup brown sugar, packed
  • ¼ cup honey
  • 1 tbsp minced garlic
  • 1 tsp ground ginger
  • ½ tsp black pepper
  • 1 cup diced bell peppers (red, yellow, or green)
  • 1 cup diced onion
  • Cooked rice (for serving)
  • Chopped green onions (for garnish)

Instructions

  • Prepare the Chicken: Place the boneless, skinless chicken thighs in the crockpot.
  • Make the Sauce: In a mixing bowl, whisk together the pineapple juice, soy sauce, brown sugar, honey, minced garlic, ground ginger, and black pepper until well combined.
  • Combine in Crockpot: Pour the sauce over the chicken in the crockpot. Add the diced bell peppers and onions, and stir to coat everything evenly.
  • Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and fully cooked.
  • Shred and Serve: Once cooked, shred the chicken directly in the sauce using two forks. Serve over cooked rice and garnish with chopped green onions. Enjoy!

Notes

  • Make it gluten-free: Swap soy sauce with tamari or coconut aminos.
  • Add more veggies: Throw in some carrots or snap peas for extra color and crunch.
  • Storage: Leftovers can be stored in the fridge for up to 4 days or frozen for up to 3 months.
  • Thicken the sauce: For a thicker sauce, mix 1 tbsp of cornstarch with 2 tbsp of water and stir into the sauce 15 minutes before serving.
  • Prep Time: 10 minutes
  • Cook Time: 6-8 hours on low or 3-4 hours on high
