Instructions

  • Place the boneless, skinless chicken thighs or breasts in your crockpot.
  • In a mixing bowl, whisk together the pineapple chunks (with juice), soy sauce, brown sugar, ketchup, minced garlic, ginger (if using), and black pepper.
  • Pour the sauce over the chicken, ensuring it’s fully coated.
  • Scatter the sliced red and green bell peppers on top of the chicken and sauce.
  • Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and easily shredded.
  • Once cooked, shred the chicken in the sauce using tongs or a fork. Stir everything together.
  • Serve the shredded chicken over cooked rice and garnish with sliced green onions. Enjoy!

Notes

  • You can substitute chicken breasts for thighs for a leaner option, but thighs will yield juicier results.
  • Add a little heat by stirring in crushed red pepper flakes or sriracha to the sauce.
