Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the mashed sweet potato and blueberries. Gently mash the blueberries into the mixture.
- Stir in the rolled oats, whole wheat flour, and beaten egg. Mix until well combined.
- Roll the mixture into small balls and place them on a parchment-lined baking sheet.
- Bake for 15-20 minutes, or until the balls are firm and slightly golden.
- Let the sweet potato & blueberry balls cool completely before serving.
