  • 1/2 cup mashed sweet potato (cooked)
  • 1/2 cup fresh blueberries
  • 1 cup rolled oats
  • 1/4 cup whole wheat flour
  • 1 egg (beaten)

Instructions

 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the mashed sweet potato and blueberries. Gently mash the blueberries into the mixture.
  3. Stir in the rolled oats, whole wheat flour, and beaten egg. Mix until well combined.
  4. Roll the mixture into small balls and place them on a parchment-lined baking sheet.
  5. Bake for 15-20 minutes, or until the balls are firm and slightly golden.
  6. Let the sweet potato & blueberry balls cool completely before serving.
