Instructions
- Prep the Sweet Potatoes: Preheat the oven to 350°F (175°C). Peel, cube, and boil the sweet potatoes until tender, about 15-20 minutes. Drain and mash until smooth.
- Make the Filling: In a large mixing bowl, combine mashed sweet potatoes, sweetened condensed milk, eggs, vanilla extract, cinnamon, nutmeg, ginger, salt, and melted butter. Mix until well combined and smooth.
- Assemble the Pie: Pour the sweet potato mixture into the unbaked pie crust and spread it evenly.
