This Trader Joe’s Ricotta and Lemon Zest Ravioli with Burst Tomatoes and Burrata is a quick, elegant pasta dish bursting with bright citrusy flavors, creamy burrata, and sweet, juicy tomatoes. Ready in just 15 minutes, this recipe is perfect for busy weeknights or an effortlessly gourmet dinner at home!
Ingredients
- 1 package Trader Joe’s Ricotta and Lemon Zest Ravioli (about 9 oz)
- 1 tablespoon olive oil
- 1 pint cherry or grape tomatoes, halved
- 2 garlic cloves, minced
- 1 tablespoon fresh basil, chopped
- 1 ball burrata cheese, torn into pieces
- Salt and pepper, to taste
- Grated Parmesan cheese, for garnish
Instructions
- Cook the ravioli – Bring a large pot of salted water to a boil. Cook the ravioli according to the package instructions, about 3-4 minutes, until al dente. Drain, reserving ½ cup of pasta water.
- Sauté the tomatoes – While the ravioli cooks, heat 1 tablespoon olive oil in a large skillet over medium heat. Add the halved cherry tomatoes and cook for 4-5 minutes, stirring occasionally, until they begin to burst.
- Add garlic & seasoning – Stir in 2 minced garlic cloves and cook for another 1-2 minutes, until fragrant. Season with salt and pepper to taste.
- Combine with ravioli – Add the cooked ravioli to the skillet, along with a splash of the reserved pasta water to create a light sauce. Toss gently to combine.
- Finish with burrata & basil – Remove from heat and stir in 1 tablespoon fresh basil. Divide between plates and top with torn pieces of burrata.
- Garnish & serve – Sprinkle with grated Parmesan cheese and enjoy immediately!
Notes
- No Trader Joe’s ravioli? Use any ricotta-filled ravioli and add a bit of lemon zest.
- No burrata? Fresh mozzarella, ricotta, or mascarpone works too!
