Chile Relleno Casserole
Make this easy chile relleno casserole with fresh chiles like Anaheim peppers, poblanos or Hatch chiles.
The hotter the chiles the hotter the chilie relleno casserole will be!
STEP 1Roast the chiles using a broiler, open flame or air fryer. They are done when the skin is blackened.
Let them sit for 15 minutes covered in plastic wrap, then peel the skin off and chop.
Put the chopped chiles in a casserole dish and top with shredded cheese.
Mix the eggs, milk, cornmeal, baking powder and salt and pour it into the casserole dish.
Bake the chile relleno casserole at 450 F for 15-20 minutes, until the middle is set and it is brown on top.
Slice the chile relleno casserole into squares and serve.
Or use it like a dip with chips.
