1Cook the onions in oil until soft and translucent then add the garlic and cook for 60 seconds more.
2Add the can of whole tomatoes to the pot along with all the liquid. Use a wooden spoon to break up the tomatoes into smaller chunks.
3Add the brown rice and water to the pot and stir to combine. Cover with a lid, reduce the heat to low and cook the rice for 30-35 minutes or until tender.
