step 1Cream the room temperature butter and sugar together in a stand mixer until light and creamy.
step 2Add egg, vanilla extract, and lemon juice. Mix to incorporate. Fold in dry ingredients until almost fully incorporated.
step 3Break up the frozen raspberries with your hands. Add them to the bowl and fold into cookie dough. Don't overmix. Chill the dough and preheat oven.
step 4Use a cookie scoop to scoop dough onto a prepared baking sheet. Bake in the oven until edges are set and golden.
