STEP 1:Slice down the middle of salmon fillets. Brush with olive oil and season with salt + pepper.
STEP 2:In a pan, wilt spinach. Stir in feta, parmesan, jarred red peppers, and spices.
STEP 3:Fill the cut salmon fillets with the spinach-feta "stuffing."
STEP 4:Bake in the oven for about 15 minutes. Serve hot!
