Zapekanka is a traditional Ukrainian cheesecake that’s lightly sweet, creamy, and comforting. - 2 cups farmer’s cheese (or ricotta/cottage cheese)
- 1/2 cup sour cream
- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 cup semolina flour or all-purpose flour
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Optional: 1/2 cup raisins or dried fruit, soaked and drained
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round baking dish.
- Mix ingredients: In a large bowl, combine the farmer’s cheese, sour cream, sugar, eggs, flour, vanilla extract, and salt. Mix until smooth. Fold in raisins or dried fruit if desired.
- Bake: Pour the mixture into the prepared baking dish and smooth the top. Bake for 40-45 minutes or until the top is golden and a toothpick inserted into the center comes out clean.
- Cool and serve: Let cool slightly before slicing. Serve warm or at room temperature with sour cream or fruit preserves.
