Description

These 5-Ingredient BBQ Chicken Foil Packets are a perfect solution for busy weeknights or weekend barbecues. Juicy chicken drumsticks and thighs, seasoned and paired with mixed vegetables, all wrapped up in a neat foil packet for an easy, no-mess meal. Delicious, simple, and packed with flavor!


Ingredients

8 skinned chicken drumsticks and thighs (on the bone)

1 tsp kosher salt

½ tsp smoked paprika

½ tsp garlic powder

3 cups frozen mixed vegetables

½ cup BBQ sauce (divided)

Optional: chopped fresh parsley for garnish

4 pieces heavy-duty aluminum foil (12 x 18 inches)


Instructions

Preheat the oven to 400°F (200°C).

Season the chicken pieces with kosher salt, smoked paprika, and garlic powder. Rub the spices in well.

Lay out four pieces of heavy-duty aluminum foil. In the center of each piece, place an equal portion of the frozen mixed vegetables. Top each vegetable mound with two pieces of seasoned chicken.

Drizzle about 1 tablespoon of BBQ sauce over each chicken piece. Reserve the remaining BBQ sauce for later.

Fold the sides of the foil over the chicken, covering it completely and sealing the packets closed.

Place the packets on a baking sheet and bake in the preheated oven for 35-40 minutes, until the chicken is fully cooked and the vegetables are tender.

Carefully open the foil packets. Drizzle the remaining BBQ sauce over the chicken and sprinkle with fresh parsley if desired.

Notes

Use a meat thermometer to ensure the chicken is fully cooked (internal temperature should reach 165°F).

Customize the vegetable mix with your favorite fresh or frozen veggies.

These packets can be grilled on medium-high heat for about 30-35 minutes, turning once halfway through.
