Instructions

  1. Prep the Gelatin: In a small bowl, sprinkle gelatin over cold water and let stand for about 5 to 10 minutes until it blooms.
  2. Infuse the Cream: In a saucepan, combine heavy cream, sugar, and the seeds scraped from the vanilla bean. Cook over medium heat, stirring until the sugar dissolves and the mixture is hot but not boiling.
  3. Dissolve the Gelatin: Remove the cream mixture from heat. Add the bloomed gelatin to the hot cream, stirring until the gelatin is completely dissolved.
  4. Add Milk: Stir in the cold milk, then strain the mixture through a fine sieve to ensure it’s perfectly smooth.
  5. Pour and Set: Divide the mixture into serving glasses or ramekins. Refrigerate for at least 4 hours, or until set.
  6. Garnish and Serve: Top with fresh berries and mint leaves before serving.
