Ingredients
6 large, ripe peaches, peeled and sliced
1/4 cup bourbon
3/4 cup brown sugar, divided
1/2 teaspoon ground cinnamon
A pinch of salt
1 tablespoon cornstarch
1 cup rolled oats
1/2 cup chopped pecans
1/2 cup all-purpose flour
1/2 cup cold butter, diced
1 tablespoon bourbon (for the topping)
Instructions
Preheat the oven to 350°F (175°C).
In a large bowl, mix peaches with 1/4 cup bourbon, 1/4 cup brown sugar, cinnamon, salt, and cornstarch.
In a separate bowl, combine oats, pecans, flour, and remaining brown sugar. Cut in butter until mixture is crumbly, then stir in an additional tablespoon of bourbon.
Layer the peach mixture in a greased baking dish, then top with the crumble mixture.
Bake for 45 minutes until the topping is golden and the peaches are bubbling. Serve warm.
