For the truffle filling:
- 1 cup finely shredded carrots (pat dry to remove excess moisture)
- 1 cup crushed vanilla wafers (or graham crackers)
- 4 oz cream cheese, softened
- 2 tbsp powdered sugar
- ½ tsp cinnamon
- ¼ tsp nutmeg
- ½ tsp vanilla extract
For the coating:
- 1 ½ cups white chocolate chips or melting wafers
- 1 tsp coconut oil or vegetable shortening (for smoother melting)
- Colorful sprinkles (optional, but highly recommended!)
Instructions
- Make the Mixture: Mix shredded carrots, crushed vanilla wafers, cream cheese, powdered sugar, cinnamon, nutmeg, and vanilla until a dough forms.
- Shape Into Balls: Roll the mixture into 1-inch balls and place on a parchment-lined baking sheet.
- Chill: Refrigerate for 30 minutes to firm up.
- Melt Chocolate: Microwave white chocolate and coconut oil in 20-second intervals, stirring until smooth.
- Coat & Decorate: Dip truffles in melted chocolate, letting excess drip off. Add sprinkles before chocolate sets. Let harden.
Notes
- Make sure to pat dry the carrots to prevent the truffles from becoming too soft.
- Chill before dipping for firmer truffles.
- These truffles taste better the day after, as the flavors meld together.
