Ingredients
2 cups cooked rice (preferably day-old)
2 tablespoons vegetable oil
3 large eggs, lightly beaten
1 medium onion, finely chopped
2 cloves garlic, minced
1 cup mixed vegetables (like peas, carrots, and corn)
2–3 tablespoons soy sauce (adjust to taste)
1 teaspoon sesame oil
Salt and pepper to taste
Spring onions, chopped for garnish
Instructions
Prepare Ingredients: Have all ingredients ready and within reach.
Cook Eggs: Heat 1 tablespoon oil in a large pan, add eggs, and cook, stirring until set. Remove and set aside.
