For Avocado Ranch:

1 small avocado, pitted and peeled

1/2 cup sour cream or plain Greek yogurt

1/4 cup pickled jalapeños

2 tsp lemon juice

3 tbsp chopped fresh chives

2 tbsp chopped fresh dill

1 tsp onion powder

1 tsp garlic powder

Kosher salt and black pepper, to taste

For Wraps:

4 large tortillas (gluten-free optional)

3 cups shredded lettuce

1 cup cooked quinoa

12 tbsp fajita seasoning

1/2 cup shredded cheddar or pepper jack cheese

1 cup cooked black beans

1 cup grilled or roasted corn

1 roasted or grilled bell pepper, sliced

11.5 cups grilled chicken, cubed or shredded

1 cup fresh cilantro, chopped


Instructions

Prepare the Avocado Ranch by blending the avocado, sour cream or yogurt, pickled jalapeños, lemon juice, chives, dill, onion powder, and garlic powder until smooth. Season with salt and pepper to taste.

Season the grilled chicken with fajita seasoning.

Assemble the wraps: Spread avocado ranch on each tortilla, top with lettuce, quinoa, seasoned chicken, cheese, black beans, corn, bell pepper, and cilantro.

Roll up the wraps tightly, cut in half, and serve.

Notes

For a smoky flavor, try grilling the chicken and bell peppers outdoors.
