Description

Dear foodie friends, if you’ve been on the hunt for a dish that can truly bring a smile to your face and joy to your dinner table, look no further! Today, I’m so excited to share with you a recipe that’s become a fast favorite around my house: Sticky Chicken Meatballs. These little delights are not only packed with flavor but are also perfect for everything from a simple family dinner to your next big gathering. So let’s dive right into this wonderfully sticky and absolutely delicious adventure!

Ingredients

Scale

For these scrumptious meatballs, you’ll need:

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 2 tablespoons fresh ginger, minced
  • 3 green onions, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil

For the sticky sauce:

  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 3 tablespoons rice vinegar
  • 2 teaspoons sesame oil
  • 1 tablespoon sriracha (adjust based on your heat preference)
  • 1 tablespoon cornstarch
  • 1/4 cup water

Instructions

Step 1: Mix the Meatballs

In a large bowl, combine the ground chicken, breadcrumbs, egg, garlic, ginger, green onions, soy sauce, and sesame oil. Mix until just combined—be careful not to overwork the meat.

Step 2: Shape and Cook

Shape the mixture into meatballs, about the size of a golf ball. In a large skillet over medium heat, cook the meatballs until golden brown on all sides and cooked through, about 10-12 minutes. Remove from the skillet and set aside.

Step 3: Make the Sauce

In the same skillet, combine the honey, soy sauce, rice vinegar, sesame oil, and sriracha. Mix the cornstarch with water and pour into the skillet, stirring constantly until the sauce thickens and becomes glossy.

Step 4: Combine and Serve

Add the cooked meatballs back to the skillet and toss them in the sauce until they are well coated. Sprinkle with additional sliced green onions and a sprinkle of sesame seeds if desired.

Notes

  • Handling the Meat: To prevent the meatballs from sticking to your hands while shaping them, wet your hands with cold water periodically.
  • Adjusting the Sauce: Feel free to tweak the spiciness of the sauce by adjusting the amount of sriracha, or add a bit of brown sugar for a deeper sweetness.
