Description

These spooky Peanut Butter Halloween Eyeballs are the ultimate treat for your Halloween celebrations! Creamy peanut butter balls are dipped in white chocolate, then decorated with red sparkle gel and edible googly eyes for an eerie, bloodshot look. They’re easy, fun, and a delicious addition to any Halloween party spread.

Ingredients

Scale
  • 6 tablespoons unsalted butter, softened
  • ½ cup creamy peanut butter
  • ¼ cup marshmallow creme
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • 2 cups powdered sugar
  • 1 (10-ounce) bag white candy melts
  • 1 (2-ounce) tube red sparkle gel
  • 36 large candy eyes

Instructions

  • Beat together softened butter, peanut butter, marshmallow creme, vanilla, and a pinch of salt until smooth.
  • Gradually mix in powdered sugar until a soft dough forms.
  • Roll dough into 36 evenly sized balls and refrigerate for 30 minutes.
  • Melt white candy melts according to package directions.
  • Using a toothpick, dip each peanut butter ball into melted chocolate and place on a wax paper-lined tray.
  • Squeeze a circle of red sparkle gel on top of each ball and press a candy eyeball in the center.
  • Use a toothpick to drag the red gel down the sides for a spooky, bloodshot look.
  • Let set before serving. Store in a loosely sealed container.

Notes

  • Make Ahead: These eyeballs can be made a few days ahead and stored in the fridge.
  • Freezing Option: You can freeze the peanut butter balls before decorating, then thaw and add the gel and eyes.
  • Substitutions: Almond or sunflower butter can be used instead of peanut butter for a peanut-free option.
