Ingredients

  • 2 large boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1 cup chicken broth
  • 4 oz cream cheese, cut into pieces
  • ½ cup chopped sundried tomatoes
  • 2 cups fresh spinach
  • 8 oz penne pasta
  • ½ cup grated Parmesan cheese

Instructions

  1. Season the chicken breasts with salt, pepper, Italian seasoning, and garlic powder. Place them in the slow cooker.
  2. Pour the chicken broth over the chicken. Cover and set to cook on low for 4 hours or high for 2 hours.
  3. Add the cream cheese and sundried tomatoes to the slow cooker after the chicken is cooked. Stir until the cream cheese is fully incorporated.
  4. Remove the chicken, shred it using two forks, and then return it to the slow cooker.
  5. Stir in the uncooked penne pasta and fresh spinach about 30 minutes before the end of the cooking time. Continue cooking until the pasta is tender.
  6. Serve the pasta with a sprinkle of grated Parmesan cheese on top.

Notes

  • For a thicker sauce, mix a tablespoon of cornstarch with a little water and stir into the pasta before serving.
  • The pasta can be added later if you prefer it al dente.
