- 1/2 cup almond flour
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 teaspoon almond extract
- 1/2 teaspoon vanilla extract
- Zest of 1 lemon

- 1/2 teaspoon baking powder
- Powdered sugar, for dusting
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine ricotta cheese, almond flour, and granulated sugar. Stir until smooth.
- Add the egg, almond extract, vanilla extract, lemon zest, salt, and baking powder. Mix until a slightly sticky dough forms.
- Using a spoon, scoop about 1 tablespoon of dough and shape it into a small ball. Place each ball on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until cookies are lightly golden on the edges.
- Let the cookies cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
- Once cooled, dust with powdered sugar before serving.
Notes
- Storage: Store cookies in an airtight container at room temperature for up to 3 days, or refrigerate for up to 5 days. These cookies can also be frozen for up to 1 month.
