For Brownie Cookie Dough:

  • 1/2 cup (113 g) unsalted butter, room temperature
  • 3/4 cup (150 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/3 cup Dutch-process cocoa powder
  • 1 cup (125 g) all-purpose flour, spooned and leveled
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2/3 cup semi-sweet chocolate chips

Chocolate Chip Cookie Dough:

  • 2 3/4 cups (345 g) all-purpose flourvanilla extract
  • 1 teaspoon cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (226 g) unsalted butter, cold and cubed
  • 3/4 cup (150 g) light brown sugar, packed
  • 2/3 cup (130 g) granulated sugar
  • 1 egg, plus 1 egg yolk, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup semi-sweet chocolate chips
  • Flakey sea salt for sprinkling (optional)

Directions

  1. Preheat the oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  2. Prepare the Brownie Cookie Dough: Cream together butter and brown sugar until light and fluffy. Add egg and vanilla, mixing well. Combine flour, cocoa powder, baking soda, and salt in a separate bowl. Gradually mix into the wet ingredients. Fold in chocolate chips.
  3. Prepare the Chocolate Chip Cookie Dough: Beat together butter, brown sugar, and granulated sugar until fluffy. Incorporate the egg, egg yolk, and vanilla. Whisk together flour, cornstarch, baking soda, and salt. Gradually blend into the butter mixture. Stir in chocolate chips.
  4. Scoop dough into balls, combining one ball of each dough type. Roll into uniform balls and place on the prepared sheets.
  5. Bake for 8-9 minutes, until edges are set. Cool on the sheet before transferring to a wire rack.

Notes

  • Brookies can be stored at room temperature for up to 5 days.
  • For freezing, cool completely and store in a freezer bag for up to 2 months. Defrost at room temperature or warm in a 300°F oven for 10 minutes.
