Easy Chicken Zucchini Stir Fry

Instructions:

  1. In a large bowl, whisk together soy sauce, chicken broth, cornstarch, mirin, sugar, and sesame oil until fully dissolved.
  2. Heat one teaspoon of canola oil in a large skillet over medium-high heat. Cook half of the sliced chicken until just cooked through, about 2-3 minutes on each side. Transfer to a plate and set aside.
  3. Repeat the process with the remaining chicken, using an additional teaspoon of oil. Remove the chicken to the plate.
  4. Add the remaining 1 teaspoon of oil to the skillet, and sauté the minced garlic and ginger for 30-45 seconds until fragrant but not browned.
  5. Stir in the sauce and cook for 1 minute. Add the zucchini and cook for an additional 2 minutes until the sauce thickens and the zucchini is tender-crisp.
  6. Remove from heat, and stir in the cooked chicken to coat it with the flavorful sauce. Garnish with sesame seeds and scallions if desired.
