  • ½ tsp butter, melted

Coating

  • 2 cups (200g) desiccated coconut

Step-by-Step Instructions

1. Bake the Sponge Cake

  1. Preheat oven to 180°C (350°F). Grease an 8-inch square pan and line with parchment.
  2. Sift together flour, baking powder, and salt. Set aside.
  3. Beat eggs, sugar, and vanilla with a mixer for 5-10 mins until thick and pale.

Additional:
2 cups (200g) desiccated coconut for coating


Instructions

Preheat the Oven and Prepare the Pan:
Preheat your oven to 180°C (350°F). Grease and flour an 8-inch square cake pan or line it with parchment paper.
Make the Sponge Cake:
Sift the flour, baking powder, and salt together. Set aside.
In a large bowl, beat the eggs, granulated sugar, and vanilla extract together until the mixture is light, fluffy, and almost doubled in volume. This might take about 5-10 minutes.
Gently fold in the sifted dry ingredients until just combined, being careful not to deflate the batter.
Carefully fold in the melted butter.
Pour the batter into the prepared pan and smooth the top.
