Why You’ll Love These Cookies

Buttery & crumbly – Melt-in-your-mouth texture with a coconut twist.
Easy to make – No mixer needed, just simple mixing and shaping.
Perfect jam-filled centers – Strawberry jam adds a burst of fruity sweetness.
Great for gifting – Pretty, bite-sized, and always a crowd-pleaser!

Ingredients

  • 200g butter, softened
  • 1 cup (200g) sugar
  • 2 eggs
  • 1 tsp vanilla essence
  • 1 cup (90g) desiccated coconut, plus extra for rolling
  • 4 cups (500g) self-raising flour
  • Strawberry jam (or any jam of your choice)

Step-by-Step Instructions

1. Cream Butter & Sugar

  • In a large bowl, cream together the softened butter and sugar until light and fluffy.

2. Add Wet Ingredients

  • Beat in the eggs, one at a time, followed by the vanilla essence.

3. Mix in Coconut & Flour

  • Stir in the desiccated coconut.
  • Gradually add the self-raising flour, mixing with your fingers until a soft dough forms.

4. Chill the Dough

  • Cover the dough with cling wrap and refrigerate for 5 hours (or overnight). This helps firm up the dough for easier shaping.

5. Shape the Cookies

  • Preheat oven to 180°C (350°F) and grease a baking tray.
  • Roll the dough into small balls (about 1 tbsp each).
  • Roll each ball in extra desiccated coconut for coating.

6. Add Jam Centers

  • Using a cling-wrapped thumb, press a small well into each ball.
  • Fill each hole with ½ tsp strawberry jam.

7. Bake

  • Place cookies on the tray and bake for 20-25 minutes, until lightly golden.
  • Let cool on the tray for 5 minutes, then transfer to a wire rack.

Tips for Success

Butter must be soft (but not melted) for easy creaming.

Chilling is key – Skipping this step may cause cookies to spread.
Don’t overbake – They should be just golden at the edges.
Jam alternatives – Try raspberry, apricot, or even Nutella!

Storage & Serving

  • Room temp: Store in an airtight container for up to 1 week.
  • Freeze unbaked dough: Shape balls, freeze, then bake as needed (+2-3 mins).
  • Serve with: Tea, coffee, or as a sweet snack.

Variations

Lemon Coconut Drops – Add 1 tbsp lemon zest to the dough.
Chocolate Jam Drops – Swap ½ cup flour for cocoa powder.

Almond Version – Replace coconut with ground almonds.

Final Thoughts

These Coconut Jam Drops are a nostalgic favorite—easy to make, delicious, and perfect for sharing. The coconut adds a lovely texture, while the jam keeps them moist and sweet.
