Chicken Parmesan Casserole Ingredients: 

For the Casserole:

  • 1 (16-ounce) package penne pasta
  • 1 pound boneless, skinless chicken breasts, cut into small pieces
  • 1 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 (24-ounce) jar marinara sauce
  • 2 cups low-sodium chicken broth
  • 1–1/2 cups shredded mozzarella cheese

Parmesan Streusel:

  • 1/4 cup unsalted butter, melted
  • 3/4 cup panko breadcrumbs
  • 1/2 cup shredded Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 cup thinly chopped fresh basil

Instructions:

  1. Preheat the oven to 425°F. Lightly grease a 9×13-inch baking pan or dish with cooking spray and set aside.
  2. In a large bowl, mix the pasta, chicken pieces, 1 teaspoon of Italian seasoning, salt, pepper, marinara sauce, and chicken broth. Pour the mixture evenly into the prepared pan. Cover the pan tightly with foil and bake for 45 minutes.
  3. While the pasta is baking, prepare the Parmesan streusel. In a medium bowl, whisk together the melted butter, panko breadcrumbs, and 1 teaspoon of Italian seasoning. Stir in the shredded Parmesan cheese.
  4. After 45 minutes of baking, remove the foil from the pan and gently stir the pasta mixture. Sprinkle the mozzarella cheese over the top and then add the Parmesan streusel. Return the casserole to the oven and bake for an additional 15 minutes until the cheese is melted and the streusel is crisp.
  5. Just before serving, garnish with chopped fresh basil.
