Ingredients

Churro Dough

  • 1 cup water
  • ¼ cup (½ stick) unsalted butter
  • 1 tbsp granulated sugar
  • ¼ tsp salt
  • 1 cup all-purpose flour
  • 2 large eggs

Filling

  • 8 oz cream cheese, softened
  • ¼ cup powdered sugar
  • ½ cup edible cookie dough (store-bought or homemade)

For Frying & Coating

  • Oil (vegetable or canola, for frying)
  • ½ cup granulated sugar + 1 tbsp cinnamon (for coating)

Step-by-Step Instructions

1. Make the Churro Dough

  1. In a saucepan, combine water, butter, sugar, and salt. Bring to a boil.
  2. Remove from heat and stir in flour until a smooth dough forms.
  3. Cool slightly, then beat in eggs one at a time until glossy.

2. Prepare the Filling

  1. Beat cream cheese and powdered sugar until smooth.
  2. Fold in cookie dough (break into small pieces if needed).

3. Fill & Pipe

  1. Spoon dough into a piping bag fitted with a star tip (like Wilton 1M).
  2. Pipe 4-inch logs onto parchment paper.
  3. Freeze 15 minutes (helps hold shape for frying).

4. Fry the Churros

  1. Heat 2 inches of oil to 350°F (175°C) in a deep pot.
  2. Fry 3-4 churros at a time for 2-3 minutes until golden.
  3. Drain on paper towels.

5. Coat & Fill

  1. Roll warm churros in cinnamon sugar.
  2. Use a small piping tip to inject filling into each churro.

Pro Tips

Oil temp is key: Too hot = burnt outside; too cool = greasy. Use a thermometer!
No piping bag? Use a ziplock with a corner snipped off.
Make ahead: Freeze unfried churros for 1 month (fry from frozen +1 min).

Variations

  • Nutella filling: Swap cookie dough for ½ cup Nutella.
  • Churro bites: Pipe 1-inch circles for poppable treats.
  • Dulce de leche: Drizzle with caramel sauce before serving.

Serving Suggestions

Chocolate dip: Melt ½ cup chocolate chips + 1 tsp coconut oil.
Berry sauce: Simmer 1 cup berries + 2 tbsp sugar until thick.

Yield: ~12 churros

Warning: These disappear FAST—make a double batch!
